“Traditional cooking is the foundation of everything. From there you can do different things, but always with very clear foundations.”

— Albert Güell, chef at Can Lluís

A little history

Rasquera is a village in the Ribera d’Ebre, in the Terres de l’Ebre, with a long shepherding tradition. The white Rasquera goat is a native breed that grazes in the mountains, and its kid is one of the most prized products of the area. In Catalan cooking, kid goat is a festive dish: roasted, stewed or, as here, breaded.

Our kid goat and our mató (fresh goat’s cheese) come from Artagro, a dairy goat farm on the road from Rasquera to El Perelló, in the Terres de l’Ebre. The herd grazes among centuries-old olive groves, with views of the Cardó and Tivissa ranges, and the farm makes its own artisan cheeses. For us it is the best example of local produce: we know where it comes from and who looks after it.
