Gratinated sea urchins at Can Lluís

How we make them at Can Lluís

We open the urchins, gratinate them in the oven in their own shell until golden and serve them on a bed of coarse salt. They are ordered by the piece, with a minimum of two.

€4.70 each

“Traditional cooking is the foundation of everything. From there you can do different things, but always with very clear foundations.”

— Albert Güell, chef at Can Lluís

A little history

The garota, as it is called in Catalan, is the Mediterranean sea urchin. On the Catalan coast, and above all in the Empordà, it is a much-loved winter delicacy: what you eat is the coral, the five orange tongues inside the shell, with an intense taste of the sea. It is gathered by hand under strict rules, and every winter towns such as Palafrugell hold a festival in its honour, the Garoinada.
